This ‘Noclate’* coconut kefir mousse is a gorgeous fresh dessert, full of friendly probiotic bacteria to support gut health. It’s quick and easy to make and I’ve provided alternatives for most of the ingredients, so you should not be stuck if you can’t find them. Hope you enjoy this as much as I do!
SERVES 4-6
INGREDIENTS
200g thick coconut milk kefir yogurt (strained home-made coconut milk kefir)
(alternatively use shop-bought coconut yogurt, e.g. Cocos or greek yogurt if dairy is tolerated)
2 tbsp carob powder (or 100% cacao powder)
1 tbsp maple syrup
1 tsp orange peel powder (dehyrated slices of orange, ground to powder)
(aleratively use finely grated/chopped orange zest or any berry/fruit powder you like for a different flavour)
METHOD
- Mix all ingredients well together and spoon to serving bowls. Sprinkle some orange powder on top before serving.

Notes:
- This mousse is made with home-made coconut kefir that is strained to make a thick kefir yogurt. If you don’t make your own kefir, use shop-bought coconut yogurt, e.g. CoYo, or Greek yogurt. Or come and join me in my upcoming fermentation workshops (see below for more information) to learn how to make it.
- *In my effort to be clever (!!), I’ve called this ‘noclate’, i.e. ‘no chocolate’ as I’m using carob powder as a substitute for cacao powder. If you prefer, you can of course use raw cacao powder instead of carob. Carob powder is made by grinding up pods that grow in the carob tree, also know as St John’s-bread or locust bean. It belongs to the pea family and due to its dark brown colour, it’s often used as an alternative to cacao powder to make carob bars, similar to chocolate bars.

- Carob powder and orange peel powder can be bought in good health food shops or online but if you can’t find any, use raw cacao powder and finely grated orange zest or any berry/fruit powder you like for a different flavour.

- I make my orange peel powder by slicing a whole orange with skin into thin slices and dehydrating them until completely dry, then grinding the slices into powder in a small coffee/nut grinder. You can also buy orange peel powder online.
