These  5-ingredient frozen raspberry coconut kefir bites were inspired by Jo Romero’s yummy raspberry and coconut fudge. You can see her recipe at the Comfort Bites Blog.

I made mine with home-made coconut milk kefir yogurt instead of creamed coconut, in order to add probiotics to support gut health (if you don’t make your own coconut kefir/kefir yogurt, it can be substituted with shop-bought coconut yogurt). I also added cacao butter to my recipe.

This is a tasty keto dessert/snack, high in natural healthy fats from the coconut kefir and cacao butter. The fats are combined with zingy raspberries, packed full of vitamin C, fibre and phytonutrients.

This is a treat that you can enjoy with no guilt! Hope you like them! 

Frozen Raspberry Coconut Kefir Bites

 

Ingredients:

200g home-made coconut kefir yogurt (or shop-bought coconut yogurt)

1/2 cup of cacao butter

1 tbsp maple syrup

A handful of frozen raspberries

A handful of freeze-dried raspberries
